Ultimate chocolate chip cookies (RECIPE)

Lately I have barely been eating out, once a week maximum. Maybe because I’m trying to save money for a beautiful pair of red sneakers from Sandro Paris which I might end up not even buying because I’m weird like that. Instead, I’ve been at home cooking and baking a lot, especially baking. I cook for myself and Simon pretty much every day, but I sometimes go through phases where I do it even more. A lot of the things I bake are the healthy version of things that I love, so I can eat them more often (or eat a whole batch of cookies and not feel as guilty…). Some of my favorite things to bake are healthy banana muffins, healthy crepes, healthy cookies, etc. from Pinterest and health bloggers I follow. Especially healthy chocolate chip cookies. I think I have three or four healthy versions of them, and they are all fairly good, but no where near as good as a proper choc chip cookie.

So this weekend I decided to ask my mom for her recipe of chocolate chip cookies – the ones I grew up eating – which she believes she got from an issue of Martha Stewart’s Living magazine years ago. They are far from healthy but are so, so good they are worth every single calorie.

If you make them, just try not to eat the whole batch in less than a day just like we did, so you can enjoy them for a longer period of time! Or just double the quantity of every ingredient…

Ingredients
420g plain white flour
200g butter at room temperature
1/2 tsp. baking powder
200g white caster sugar
80g brown soft sugar
1/2 tsp. salt
2 tsp. vanilla extract
2 eggs
300g chocolate chips

Method
1. Turn the oven on at 180ºC
2. In a bowl, combine the flour, salt and baking powder
3. In a bigger bowl, mix the butter and both white and brown sugar.
Once the mixture looks creamy, add the eggs and vanilla, and
keep mixing until all the ingredients are well incorporated
4. Add the chocolate chips and mix thoroughly
5. Line a tray with non-stick baking paper
6. With a spoon, drop large spoonfuls of the dough onto the tray, 
making sure they are 2 inches apart from each other
