Guess who’s BAAAACK! I wish I had a good excuse for having been absent for so long, but nah, I don’t. Unless you can call being lazy and not being able to manage time properly an excuse.
Nothing’s changed in the past half a year, well… I’ve actually not been eating out as much, but rather spending money on ingredients to make delicious things at home that I CANNOT wait to share! I’ve also bought a couple of photography backdrops – about time right? – so you won’t have to stare at my balcony’s wooden table anymore, and I won’t have to go outside and freeze to death when I take pictures. It’s a win-win situation!
My comeback recipe is something I’ve been wanting to make for a few months now. I thought it was a somewhat difficult recipe which was holding me back – but to my surprise it was the total opposite. Took me around 20-30 minutes to make it and it was SO GOOD.
1 brown onion
1 garlic clove
1 red pepper
1 green pepper
400g canned chopped tomatoes
1 tbsp paprika
1 tbsp cumin
1 tbsp cayenne pepper
salt & pepper
Chop the onions and peppers and cook them in a non-stick pan with olive oil until soft.
Add the chopped tomatoes, all spices, salt and pepper and cook until the tomatoes get slightly thick.
Create four wells in the sauce and crack an egg into each of them, cover and cook until the whites are done but the eggs are still runny.
Add feta and coriander. Enjoy!
