Coconut and Chocolate Energy Bites

I’m not too sure if I’ve mentioned this before, but I am obsessed with chocolate chip cookies. I could eat them all day, every day. I like to buy them and bake them, and I like them with milk, dark or white chocolate. I just love all of them. However, they’re not the healthiest thing to eat and lately, I was having one too many.

After my trip to Denmark (which I’ll talk about in a post next week) I decided that the best way to stop eating as many cookies a day was to completely cut out sugar for a month, then after the month I wouldn’t crave sugary things as much because my body would’ve gotten used to snacking on other things. I’m not sure if this makes any sense or if it’s scientifically proven to work, but doing things like this work great for me.

When I lived in the states, I gained 15 kg in less than 5 months. After than, despite being in the swimming, cheerleading and gymnastics team, I was struggling to lose weight because my body had just gotten used to eating candy and other crap, so I decided to completely cut out cookies and crisps for lent. If you’re not sure what lent is please Google it, too long to explain, soz! After the 40 days, I think I lost around 2.5-3 kg, and after that I just kept losing weight and went back to normal.

Because I miss cookies so much, I decided to experiment in the kitchen and come up with a recipe that would satisfy my cravings. I actually have tons of sugarless cookie recipes but was too lazy to make them, I just wanted to whisk up something in a few minutes and eat it.

After some Pinterest inspiration, I came up with this recipe for Coconut¬†and Chocolate energy bites. They take literally 20 minutes to make and you don’t need to bake them, just leave them in the fridge for a couple of hours, or you can eat them before too if you’re too desperate to try them. Like me.

Coconut and Chocolate Energy Bites

2 medium ripe bananas
2 cups whole rolled oats
1/2 cup peanut butter
1/4 of maple syrup
1 handful of chocolate (I used Pana Chocolate)
1/3 coconut flakes

With a fork, mash up the bananas in a mixing bowl.
Stir in the oats, peanut butter, maple syrup and chocolate.
Scoop a heaped table spoon of the mixture and role into a ball. To make them all
the same size, I use a scale to check they all weigh 40g. You can skip this step
if you’re not as picky as me.
Place the ball into a bowl with the coconut flakes and move it around until its
covered in coconut.
Refrigerate for 2 hours

They’re absolutely delicious and they last in the fridge for a good week, at least. Perfect for making on a Sunday and taking them to work as mid-day snacks! I don’t think mine will last until tomorrow but I will try my best.
